Phapar Ko Thukpa (sikkimese Style Buckwheat Noodles)

Ingredients

  • 2 cups buckwheat flour
  • Water
  • 1 tablespoon vegetable oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 carrot, julienned
  • 1 cup cabbage, shredded
  • 4 cups vegetable broth
  • 1 teaspoon soy sauce
  • Salt to taste
  • Black pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large mixing bowl, combine the buckwheat flour with water to form a stiff dough. Knead the dough for a few minutes, then cover and let it rest for 15 minutes.
  2. Roll out the dough on a floured surface and cut into thin noodles. Dust the noodles with additional buckwheat flour to prevent sticking.
  3. In a large pot, heat the vegetable oil over medium heat. Add the sliced onion, minced garlic, and grated ginger. Sauté until fragrant.
  4. Add the julienned carrot and shredded cabbage to the pot. Cook for a few minutes until the vegetables begin to soften.
  5. Pour in the vegetable broth and soy sauce. Season with salt and black pepper to taste. Bring the broth to a simmer.
  6. Add the buckwheat noodles to the simmering broth. Cook for about 15-20 minutes or until the noodles are tender.
  7. Divide the Phapar Ko Thukpa into serving bowls and garnish with fresh cilantro. Serve hot and enjoy!
