Phapar Ko Thukpa (sikkimese Style Buckwheat Noodles)
Phapar Ko Thukpa is a traditional Sikkimese dish made with buckwheat noodles and a flavorful broth. This hearty and comforting noodle soup is perfect for a cozy meal on a chilly day.
Ingredients
- 2 cups buckwheat flour
- Water
- 1 tablespoon vegetable oil
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1-inch ginger, grated
- 1 carrot, julienned
- 1 cup cabbage, shredded
- 4 cups vegetable broth
- 1 teaspoon soy sauce
- Salt to taste
- Black pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large mixing bowl, combine the buckwheat flour with water to form a stiff dough. Knead the dough for a few minutes, then cover and let it rest for 15 minutes.
- Roll out the dough on a floured surface and cut into thin noodles. Dust the noodles with additional buckwheat flour to prevent sticking.
- In a large pot, heat the vegetable oil over medium heat. Add the sliced onion, minced garlic, and grated ginger. Sauté until fragrant.
- Add the julienned carrot and shredded cabbage to the pot. Cook for a few minutes until the vegetables begin to soften.
- Pour in the vegetable broth and soy sauce. Season with salt and black pepper to taste. Bring the broth to a simmer.
- Add the buckwheat noodles to the simmering broth. Cook for about 15-20 minutes or until the noodles are tender.
- Divide the Phapar Ko Thukpa into serving bowls and garnish with fresh cilantro. Serve hot and enjoy!
