Ingredients
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup pitted dates, finely chopped
- 1/4 cup water
Instructions
- In a saucepan, combine the chopped dates and water. Cook over medium heat, stirring occasionally, until the mixture thickens and the dates soften. Remove from heat and let it cool.
- In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy. Add the vanilla extract and mix well.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing until a dough forms.
- Divide the dough in half. Roll each half into a log shape, then flatten it into a rectangle on a lightly floured surface.
- Spoon the cooled date mixture onto one half of each rectangle. Fold the other half of the dough over the dates and press the edges to seal.
- Cut the filled dough into individual cookies and place them on a baking sheet lined with parchment paper.
- Bake in a preheated oven at 350°F (175°C) for 12-15 minutes, or until the cookies are golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
