Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 cup cooked lentils
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Cut the tops off the bell peppers and remove the seeds and membranes.
  2. In a large bowl, mix together the cooked rice, cooked lentils, chopped onion, diced tomatoes, parsley, dill, olive oil, cumin, paprika, salt, and pepper.
  3. Stuff the bell peppers with the rice and lentil mixture.
  4. Place the stuffed peppers in a pot and add enough water to cover the bottom of the pot.
  5. Cover the pot and cook the stuffed peppers on the stovetop over medium heat for 45 minutes, or until the peppers are tender.
  6. Serve the stuffed peppers hot and enjoy!
