Ingredients
- 4 large tomatoes
- 1 cup cooked rice
- 1/2 cup cooked lentils
- 1/4 cup chopped onions
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh dill
- 1/4 cup chopped fresh mint
- 1/4 cup pine nuts
- 1/4 cup raisins
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the tomatoes and scoop out the pulp and seeds. Sprinkle the insides with salt and place them upside down on a paper towel to drain.
- In a large bowl, mix together the cooked rice, cooked lentils, onions, garlic, parsley, dill, mint, pine nuts, raisins, cumin, coriander, cinnamon, salt, and pepper.
- Stuff the tomato shells with the rice and lentil mixture.
- Place the stuffed tomatoes in a baking dish, drizzle with olive oil, and bake for 30-35 minutes, or until the tomatoes are tender.
- Serve the stuffed tomatoes hot, garnished with additional fresh herbs if desired.
