Pharaoh's Royal Stuffed Tomatoes (طماطم محشوة ملكية الفراعنة)

Ingredients

  • 4 large tomatoes
  • 1 cup cooked rice
  • 1/2 cup cooked lentils
  • 1/4 cup chopped onions
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh mint
  • 1/4 cup pine nuts
  • 1/4 cup raisins
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the tomatoes and scoop out the pulp and seeds. Sprinkle the insides with salt and place them upside down on a paper towel to drain.
  3. In a large bowl, mix together the cooked rice, cooked lentils, onions, garlic, parsley, dill, mint, pine nuts, raisins, cumin, coriander, cinnamon, salt, and pepper.
  4. Stuff the tomato shells with the rice and lentil mixture.
  5. Place the stuffed tomatoes in a baking dish, drizzle with olive oil, and bake for 30-35 minutes, or until the tomatoes are tender.
  6. Serve the stuffed tomatoes hot, garnished with additional fresh herbs if desired.
