Phing Tarkari (alpine Vegetable Stew)

Ingredients

  • 1 cup diced potatoes
  • 1 cup chopped carrots
  • 1 cup sliced mushrooms
  • 1 cup chopped spinach
  • 1/2 cup diced onions
  • 3 cloves garlic, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric
  • 1 teaspoon red chili powder
  • 2 tablespoons vegetable oil
  • Salt to taste
  • 4 cups water

Instructions

  1. Heat vegetable oil in a pot over medium heat.
  2. Add cumin seeds and let them sizzle for a few seconds.
  3. Add diced onions and minced garlic, sauté until onions are translucent.
  4. Add diced potatoes, chopped carrots, and sliced mushrooms. Cook for 5 minutes.
  5. Stir in turmeric, red chili powder, and salt.
  6. Pour in water and bring to a boil. Reduce heat and let it simmer for 15-20 minutes.
  7. Add chopped spinach and cook for an additional 5 minutes.
  8. Adjust seasoning if needed and serve hot.
