Pho Hmoob (hmong-style Pho)
Pho Hmoob, or Hmong-style Pho, is a traditional Hmong noodle soup that is flavorful and comforting. This dish is a staple in Hmong cuisine and is often enjoyed during special occasions and family gatherings.
Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, halved
- 4-inch piece of ginger, sliced
- 3 star anise pods
- 3 whole cloves
- 1 cinnamon stick
- 1 tablespoon coriander seeds
- 1 tablespoon fennel seeds
- 1 tablespoon sugar
- 1 tablespoon salt
- 1 pound dried rice noodles
- Bean sprouts, Thai basil, lime wedges, and sliced chili for serving
Instructions
- In a large pot, char the onions and ginger over an open flame or under the broiler until slightly blackened.
- Add the chicken pieces, star anise, cloves, cinnamon stick, coriander seeds, fennel seeds, sugar, and salt to the pot.
- Pour enough water into the pot to cover the chicken and bring to a boil. Reduce heat and simmer for 1.5 hours, skimming off any foam that rises to the surface.
- Remove the chicken pieces from the broth and set aside. Strain the broth and discard the solids.
- Cook the rice noodles according to the package instructions.
- Divide the cooked noodles among serving bowls and top with the reserved chicken pieces.
- Ladle the hot broth over the noodles and chicken.
- Serve the Pho Hmoob with bean sprouts, Thai basil, lime wedges, and sliced chili on the side for garnish.
