Pho Hmoob (hmong-style Pho)

Ingredients

  • 1 whole chicken, cut into pieces
  • 2 onions, halved
  • 4-inch piece of ginger, sliced
  • 3 star anise pods
  • 3 whole cloves
  • 1 cinnamon stick
  • 1 tablespoon coriander seeds
  • 1 tablespoon fennel seeds
  • 1 tablespoon sugar
  • 1 tablespoon salt
  • 1 pound dried rice noodles
  • Bean sprouts, Thai basil, lime wedges, and sliced chili for serving

Instructions

  1. In a large pot, char the onions and ginger over an open flame or under the broiler until slightly blackened.
  2. Add the chicken pieces, star anise, cloves, cinnamon stick, coriander seeds, fennel seeds, sugar, and salt to the pot.
  3. Pour enough water into the pot to cover the chicken and bring to a boil. Reduce heat and simmer for 1.5 hours, skimming off any foam that rises to the surface.
  4. Remove the chicken pieces from the broth and set aside. Strain the broth and discard the solids.
  5. Cook the rice noodles according to the package instructions.
  6. Divide the cooked noodles among serving bowls and top with the reserved chicken pieces.
  7. Ladle the hot broth over the noodles and chicken.
  8. Serve the Pho Hmoob with bean sprouts, Thai basil, lime wedges, and sliced chili on the side for garnish.
