Pho-nomenal Noodle Soup (Phở)

Ingredients

  • 1 onion, halved
  • 4-inch piece of ginger, halved lengthwise
  • 4 star anise
  • 6 whole cloves
  • 1 cinnamon stick
  • 1 cardamom pod
  • 8 cups beef broth
  • 1 pound beef sirloin, thinly sliced
  • 8 oz rice noodles
  • 1/4 cup fish sauce
  • 2 tbsp sugar
  • 1 cup bean sprouts
  • 1/2 cup fresh basil leaves
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup fresh mint leaves
  • 1 lime, cut into wedges
  • 2-3 Thai chilies, thinly sliced (optional)

Instructions

  1. In a dry pan, toast the onion and ginger until slightly charred.
  2. Place the star anise, cloves, cinnamon stick, and cardamom pod in a spice bag or wrap in cheesecloth.
  3. In a large pot, combine the beef broth, charred onion, charred ginger, and the spice bag. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  4. Remove the spice bag, onion, and ginger from the broth. Add the fish sauce and sugar, then bring the broth back to a simmer.
  5. Cook the rice noodles according to the package instructions, then divide among serving bowls.
  6. Top the noodles with the sliced beef and bean sprouts.
  7. Ladle the hot broth over the beef, noodles, and bean sprouts.
  8. Serve the Phở with basil, cilantro, mint, lime wedges, and Thai chilies on the side for garnish.
