Pōhutukawa Glazed Ham (Hāmu Hāngī)
Hāmu Hāngī, also known as Pōhutukawa Glazed Ham, is a traditional New Zealand dish that is perfect for festive gatherings and special occasions. This recipe combines the flavors of succulent ham with a sweet and tangy Pōhutukawa glaze, creating a mouthwatering centerpiece for any celebration.
Ingredients
- 1 bone-in ham, about 5-6 kg
- 2 cups brown sugar
- 1 cup Pōhutukawa honey
- 1/4 cup whole cloves
- 2 tablespoons mustard
- 1/4 cup apple cider vinegar
Instructions
- Preheat the oven to 160°C (320°F).
- Score the ham with a sharp knife in a crisscross pattern. Place cloves in the intersections of the cuts.
- In a saucepan, combine the brown sugar, Pōhutukawa honey, mustard, and apple cider vinegar. Cook over medium heat, stirring constantly, until the glaze is smooth and slightly thickened.
- Brush the ham with the Pōhutukawa glaze, making sure to coat it evenly.
- Place the ham in a roasting pan and bake for about 2-3 hours, basting with the glaze every 30 minutes, until the ham is caramelized and heated through.
- Remove the ham from the oven and let it rest for 15 minutes before slicing.
