Pōhutukawa Glazed Ham (Hāmu Hāngī)

Ingredients

  • 1 bone-in ham, about 5-6 kg
  • 2 cups brown sugar
  • 1 cup Pōhutukawa honey
  • 1/4 cup whole cloves
  • 2 tablespoons mustard
  • 1/4 cup apple cider vinegar

Instructions

  1. Preheat the oven to 160°C (320°F).
  2. Score the ham with a sharp knife in a crisscross pattern. Place cloves in the intersections of the cuts.
  3. In a saucepan, combine the brown sugar, Pōhutukawa honey, mustard, and apple cider vinegar. Cook over medium heat, stirring constantly, until the glaze is smooth and slightly thickened.
  4. Brush the ham with the Pōhutukawa glaze, making sure to coat it evenly.
  5. Place the ham in a roasting pan and bake for about 2-3 hours, basting with the glaze every 30 minutes, until the ham is caramelized and heated through.
  6. Remove the ham from the oven and let it rest for 15 minutes before slicing.
