Ingredients

  • 1 pork tenderloin
  • 2 tablespoons pōhutukawa honey
  • 1 tablespoon soy sauce
  • 1 teaspoon minced garlic
  • 1 teaspoon grated ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Combine pōhutukawa honey, soy sauce, garlic, ginger, cumin, paprika, salt, and pepper in a bowl to make the glaze.
  2. Marinate the pork tenderloin in the glaze for at least 1 hour.
  3. Prepare the hāngī (earth oven) by heating stones over a fire.
  4. Wrap the marinated pork tenderloin in banana leaves and place it in the hāngī, covering it with more leaves and a layer of soil.
  5. Cook the pork tenderloin in the hāngī for 2 hours, allowing the earth oven to slowly infuse the meat with smoky flavors.
  6. Uncover the hāngī, remove the pork tenderloin, and slice it for serving.

Tips & tricks
