Ingredients
- 1 pork tenderloin
- 2 tablespoons pōhutukawa honey
- 1 tablespoon soy sauce
- 1 teaspoon minced garlic
- 1 teaspoon grated ginger
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Combine pōhutukawa honey, soy sauce, garlic, ginger, cumin, paprika, salt, and pepper in a bowl to make the glaze.
- Marinate the pork tenderloin in the glaze for at least 1 hour.
- Prepare the hāngī (earth oven) by heating stones over a fire.
- Wrap the marinated pork tenderloin in banana leaves and place it in the hāngī, covering it with more leaves and a layer of soil.
- Cook the pork tenderloin in the hāngī for 2 hours, allowing the earth oven to slowly infuse the meat with smoky flavors.
- Uncover the hāngī, remove the pork tenderloin, and slice it for serving.

Tips & tricks
