Ingredients
- 1 1/2 cups all-purpose flour
- 3 1/2 tsp baking powder
- 1/2 tsp salt
- 2 tbsp granulated sugar
- 1 cup coconut milk
- 1/2 cup crushed pineapple, drained
- 1/4 cup rum (optional)
- 1 tsp vanilla extract
- 1/4 cup shredded coconut
- 2 eggs
- 1/4 cup melted butter
Instructions
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- In another bowl, mix the coconut milk, crushed pineapple, rum (if using), vanilla extract, shredded coconut, eggs, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
- Pour 1/4 cup of batter onto the skillet for each pancake and cook until bubbles form on the surface, then flip and cook until golden brown.
- Serve the pancakes warm, topped with additional shredded coconut, pineapple chunks, and a drizzle of maple syrup.
