Piña Colada Pancakes (Panqueques de Piña Colada)

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp granulated sugar
  • 1 cup coconut milk
  • 1/2 cup crushed pineapple, drained
  • 1/4 cup rum (optional)
  • 1 tsp vanilla extract
  • 1/4 cup shredded coconut
  • 2 eggs
  • 1/4 cup melted butter

Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In another bowl, mix the coconut milk, crushed pineapple, rum (if using), vanilla extract, shredded coconut, eggs, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
