Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup sour cream
  • 1/4 cup butter, melted
  • 1 cup mashed potatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped onion
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix together the flour and salt. In a separate bowl, whisk together the egg, sour cream, and melted butter. Gradually add the wet ingredients to the flour mixture, stirring until a dough forms.
  2. On a floured surface, knead the dough until smooth. Roll out the dough and cut into circles using a cookie cutter or a glass.
  3. In a separate bowl, mix together the mashed potatoes, cheddar cheese, chopped onion, salt, and pepper. Place a spoonful of the filling onto each dough circle. Fold the dough over the filling and press the edges to seal.
  4. Bring a large pot of salted water to a boil. Cook the pierogi in batches for about 5 minutes, or until they float to the surface. Remove with a slotted spoon and drain.
  5. Optional: Pan-fry the cooked pierogi in butter until golden brown.
