Pierogi (ukrainian Varenyky)
Pierogi, also known as Ukrainian Varenyky, are delicious filled dumplings that are a staple in Eastern European cuisine. They can be filled with a variety of ingredients such as potatoes, cheese, sauerkraut, or fruit, and are typically served with sour cream or butter.
Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 large egg
- 1/2 cup sour cream
- 1/4 cup butter, melted
- 2 cups mashed potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- Salt and pepper to taste
Instructions
- In a large bowl, mix the flour and salt. Add the egg and sour cream, and mix until the dough comes together.
- Knead the dough on a floured surface until smooth, then cover and let it rest for 30 minutes.
- In a separate bowl, mix the mashed potatoes, cheddar cheese, diced onion, salt, and pepper.
- Roll out the dough and cut it into circles. Place a spoonful of the potato filling in the center of each circle, then fold the dough over and seal the edges.
- Boil the pierogi in a large pot of salted water for about 5 minutes, or until they float to the surface.
- Remove the pierogi with a slotted spoon and transfer to a serving dish. Drizzle with melted butter before serving.
