Pierogi (ukrainian Varenyky)

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup sour cream
  • 1/4 cup butter, melted
  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix the flour and salt. Add the egg and sour cream, and mix until the dough comes together.
  2. Knead the dough on a floured surface until smooth, then cover and let it rest for 30 minutes.
  3. In a separate bowl, mix the mashed potatoes, cheddar cheese, diced onion, salt, and pepper.
  4. Roll out the dough and cut it into circles. Place a spoonful of the potato filling in the center of each circle, then fold the dough over and seal the edges.
  5. Boil the pierogi in a large pot of salted water for about 5 minutes, or until they float to the surface.
  6. Remove the pierogi with a slotted spoon and transfer to a serving dish. Drizzle with melted butter before serving.
