Piftie de berbec, also known as Shepherd's Delight, is a traditional Aromanian dish that is perfect for special occasions and gatherings. This savory jellied meat dish is a labor of love, but the result is a flavorful and satisfying delicacy that will impress your guests.
Ingredients
- 2 kg lamb or pork trotters
- 1 onion, quartered
- 4 garlic cloves, crushed
- 2 bay leaves
- 1 tbsp black peppercorns
- 1 tbsp salt
- Water
Instructions
- Place the trotters, onion, garlic, bay leaves, peppercorns, and salt in a large pot.
- Add enough water to cover the ingredients.
- Bring to a boil, then reduce the heat and simmer for 3-4 hours, until the meat is tender and falling off the bones.
- Remove the trotters from the pot and strain the broth. Discard the solids.
- Return the broth to the pot and simmer until it reduces by half.
- Remove the meat from the bones and arrange it in a mold.
- Pour the reduced broth over the meat, covering it completely.
- Refrigerate for at least 6 hours, or until the broth has set into a jelly.
- Unmold the piftie onto a serving platter and slice to serve.
