Pikli (ukrainian Pickled Vegetables)
Pikli, also known as Ukrainian pickled vegetables, is a traditional dish from Cossack cuisine. This tangy and crunchy mix of pickled vegetables is a perfect accompaniment to hearty Ukrainian meals or as a zesty snack on its own.
Ingredients
- 1 large cucumber, thinly sliced
- 2 medium carrots, julienned
- 1 small bell pepper, thinly sliced
- 1 small onion, thinly sliced
- 1 cup cauliflower florets
- 1 cup white vinegar
- 1 cup water
- 3 tablespoons sugar
- 1 tablespoon salt
- 1 teaspoon whole black peppercorns
- 1 teaspoon mustard seeds
- 1 teaspoon dill seeds
Instructions
- In a large bowl, combine the sliced cucumber, carrots, bell pepper, onion, and cauliflower.
- In a saucepan, combine the vinegar, water, sugar, salt, peppercorns, mustard seeds, and dill seeds. Bring to a boil, then remove from heat and let the brine cool for 5 minutes.
- Pour the cooled brine over the vegetables in the bowl. Stir to combine and ensure all the vegetables are submerged in the brine.
- Cover the bowl and let the pikli marinate in the refrigerator for at least 4 hours, or preferably overnight, before serving.
