Ingredients

  • 1 cup long-grain white rice
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Add the sliced mushrooms to the saucepan and cook until they release their moisture and become golden brown.
  3. Stir in the rice, cumin, and paprika, and cook for 2-3 minutes to toast the rice and spices.
  4. Pour in the vegetable broth and season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  5. Fluff the pilaf with a fork and let it sit, covered, for a few minutes before serving. Garnish with fresh parsley and serve hot.
