Pilaf, also known as Armenian Mushroom Pilaf, is a traditional Armenian dish that is flavorful and satisfying. This recipe combines tender mushrooms, aromatic rice, and fragrant spices to create a delicious and comforting meal.
Ingredients
- 1 cup long-grain white rice
- 2 cups vegetable broth
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the sliced mushrooms to the saucepan and cook until they release their moisture and become golden brown.
- Stir in the rice, cumin, and paprika, and cook for 2-3 minutes to toast the rice and spices.
- Pour in the vegetable broth and season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the pilaf with a fork and let it sit, covered, for a few minutes before serving. Garnish with fresh parsley and serve hot.
