Ingredients

  • 2 cups basmati rice
  • 3 1/2 cups vegetable broth
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon turmeric
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup chopped fresh parsley

Instructions

  1. Rinse the rice under cold water until the water runs clear. Drain well.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
  3. Add the minced garlic, cumin, paprika, cinnamon, and turmeric. Cook for 1-2 minutes until fragrant.
  4. Add the rice to the pot and stir to coat with the spices.
  5. Pour in the vegetable broth and season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
  6. Fluff the rice with a fork and stir in the chopped parsley. Serve hot.
