Pilaf (armenian Spiced Rice)
Pilaf is a traditional Armenian spiced rice dish that is flavorful and aromatic. It is a versatile dish that can be served as a side or as a main course.
Ingredients
- 2 cups basmati rice
- 3 1/2 cups vegetable broth
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon cinnamon
- 1/4 teaspoon turmeric
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/4 cup chopped fresh parsley
Instructions
- Rinse the rice under cold water until the water runs clear. Drain well.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic, cumin, paprika, cinnamon, and turmeric. Cook for 1-2 minutes until fragrant.
- Add the rice to the pot and stir to coat with the spices.
- Pour in the vegetable broth and season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork and stir in the chopped parsley. Serve hot.
