Pilaf (creamy Mushroom And Barley Risotto)
Pilaf, also known as Creamy Mushroom and Barley Risotto, is a traditional dish in Bukharan Jewish Cuisine. This rich and comforting dish is perfect for a hearty family meal or a special occasion.
Ingredients
- 1 cup pearl barley
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1/2 cup dry white wine
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions
- In a large pot, bring the vegetable broth to a simmer.
- In a separate pan, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
- Add the mushrooms to the pan and cook until they release their liquid and become golden brown.
- Stir in the pearl barley and cook for 1-2 minutes.
- Pour in the white wine and cook until it is absorbed by the barley.
- Begin adding the hot broth to the barley, one ladleful at a time, stirring frequently and allowing each addition to be absorbed before adding the next.
- Continue this process until the barley is creamy and tender, about 30 minutes.
- Stir in the Parmesan cheese and season with salt and pepper. Remove from heat and let it rest for a few minutes.
- Serve the pilaf in bowls, garnished with chopped parsley.
