Ingredients

  • 1 cup pearl barley
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1/2 cup dry white wine
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a large pot, bring the vegetable broth to a simmer.
  2. In a separate pan, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
  3. Add the mushrooms to the pan and cook until they release their liquid and become golden brown.
  4. Stir in the pearl barley and cook for 1-2 minutes.
  5. Pour in the white wine and cook until it is absorbed by the barley.
  6. Begin adding the hot broth to the barley, one ladleful at a time, stirring frequently and allowing each addition to be absorbed before adding the next.
  7. Continue this process until the barley is creamy and tender, about 30 minutes.
  8. Stir in the Parmesan cheese and season with salt and pepper. Remove from heat and let it rest for a few minutes.
  9. Serve the pilaf in bowls, garnished with chopped parsley.
