Ingredients
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1 1/2 cups long-grain white rice
- 3 cups chicken broth
- 1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic, ground cumin, ground coriander, turmeric, and paprika to the pot. Cook, stirring constantly, for 1-2 minutes until fragrant.
- Stir in the rice and cook for 2 minutes, stirring occasionally.
- Pour in the chicken broth and add the chicken pieces. Season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes until the rice is tender and the chicken is cooked through.
- Fluff the pilaf with a fork and let it sit, covered, for 5 minutes before serving. Garnish with chopped fresh cilantro.
