Ingredients

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chicken cubes and cook until browned on all sides. Remove the chicken from the pot and set aside.
  2. In the same pot, add the chopped onion, garlic, and carrots. Cook until the vegetables are softened.
  3. Add the rice, cumin, coriander, and paprika to the pot. Stir to combine with the vegetables.
  4. Pour in the chicken broth and season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.
  5. Stir in the cooked chicken and let it warm through for a few minutes.
  6. Remove from heat and let the pilaf rest for 5 minutes before serving.
