Ingredients
- 2 cups basmati rice
- 1 lb chicken breast, cut into cubes

- 1 teaspoon paprika
- 4 cups chicken broth

Instructions
- In a large pot, heat the olive oil over medium heat. Add the chicken cubes and cook until browned on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the chopped onion, garlic, and carrots. Cook until the vegetables are softened.
- Add the rice, cumin, coriander, and paprika to the pot. Stir to combine with the vegetables.
- Pour in the chicken broth and season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.
- Stir in the cooked chicken and let it warm through for a few minutes.
- Remove from heat and let the pilaf rest for 5 minutes before serving.
