Ingredients
- 1 1/2 lbs (700g) chicken thighs, cut into bite-sized pieces
- 1 1/2 cups (300g) long-grain white rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 1/2 cups (600ml) chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Add the chicken pieces to the pot and cook until they are browned on all sides.
- Stir in the rice, cumin, paprika, turmeric, salt, and pepper, and cook for 2-3 minutes to toast the rice and spices.
- Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the pilaf with a fork, and let it sit for a few minutes before serving.
