Ingredients

  • 2 cups long-grain rice
  • 4 cups vegetable broth
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Add the rice to the pot and stir to coat it with the oil and onions.
  3. Add the vegetable broth, cumin, coriander, cinnamon, cloves, nutmeg, salt, and pepper. Stir well to combine.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  5. Once the rice is cooked, fluff it with a fork and stir in the chopped parsley.
  6. Remove the pot from the heat and let it sit, covered, for 5 minutes before serving.
