Pilafi Pleasure
Pilafi Pleasure is a traditional Cypriot rice dish that is both comforting and flavorful. This recipe combines aromatic rice with a blend of spices and herbs, creating a dish that is perfect for any occasion.
Ingredients
- 2 cups long-grain rice
- 4 cups vegetable broth
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the rice to the pot and stir to coat it with the oil and onions.
- Add the vegetable broth, cumin, coriander, cinnamon, cloves, nutmeg, salt, and pepper. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Once the rice is cooked, fluff it with a fork and stir in the chopped parsley.
- Remove the pot from the heat and let it sit, covered, for 5 minutes before serving.
