Ingredients

  • 2 cups basmati rice
  • 1 pound beef, cubed
  • 2 onions, finely chopped
  • 3 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 teaspoons pilau masala (or a mix of ground cumin, coriander, cardamom, and cloves)
  • 1 teaspoon turmeric
  • 4 cups beef or vegetable broth
  • Salt to taste
  • 3 tablespoons vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions and cook until soft and translucent.
  2. Add the beef cubes and cook until browned on all sides.
  3. Stir in the garlic, ginger, pilau masala, and turmeric, and cook for 2 minutes to toast the spices.
  4. Add the diced tomatoes and cook until they start to break down.
  5. Stir in the basmati rice and coat it with the mixture in the pot.
  6. Pour in the broth, season with salt, and bring to a boil.
  7. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  8. Fluff the pilau with a fork, then cover and let it rest for 5 minutes before serving.
