Pilav, also known as pilaf, is a popular dish in Circassian cuisine. This Circassian Style Pilaf recipe combines fragrant rice with tender meat and aromatic spices, creating a flavorful and satisfying meal.

Pilav (circassian Style Pilaf)

Ingredients

  • 1 lb (450g) lamb or chicken, cut into small pieces
  • 2 cups (400g) basmati rice, rinsed and drained
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 3 cups (720ml) chicken or vegetable broth

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until they are soft and translucent.
  2. Add the lamb or chicken pieces to the pot and cook until they are browned on all sides.
  3. Stir in the cumin, paprika, cinnamon, salt, and pepper, and cook for another 2 minutes to toast the spices.
  4. Add the rinsed and drained basmati rice to the pot, and stir to coat the rice with the spices and meat.
  5. Pour in the chicken or vegetable broth, and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let the pilaf simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  6. Fluff the pilaf with a fork, and let it rest for 5 minutes before serving.
