Pilav (circassian Style Pilaf)
Pilav, also known as pilaf, is a popular dish in Circassian cuisine. This Circassian Style Pilaf recipe combines fragrant rice with tender meat and aromatic spices, creating a flavorful and satisfying meal.
Ingredients
- 1 lb (450g) lamb or chicken, cut into small pieces
- 2 cups (400g) basmati rice, rinsed and drained
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- 3 cups (720ml) chicken or vegetable broth
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until they are soft and translucent.
- Add the lamb or chicken pieces to the pot and cook until they are browned on all sides.
- Stir in the cumin, paprika, cinnamon, salt, and pepper, and cook for another 2 minutes to toast the spices.
- Add the rinsed and drained basmati rice to the pot, and stir to coat the rice with the spices and meat.
- Pour in the chicken or vegetable broth, and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let the pilaf simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the pilaf with a fork, and let it rest for 5 minutes before serving.
