Ingredients

  • 4 large bell peppers
  • 1 cup basmati rice
  • 1 lb ground beef
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp pilau masala
  • 2 cups beef or vegetable broth
  • 2 tbsp vegetable oil
  • Salt to taste
  • Chopped fresh cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish and set aside.
  3. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  4. Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.
  5. Stir in the pilau masala and cook for another minute to toast the spices.
  6. Add the basmati rice to the skillet and stir to combine with the beef and spices.
  7. Pour in the broth and season with salt. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  8. Spoon the pilau mixture into the prepared bell peppers, filling them to the top.
  9. Cover the baking dish with foil and bake in the preheated oven for 20-25 minutes, or until the peppers are tender.
  10. Remove the foil and bake for an additional 5 minutes to lightly brown the tops of the stuffed peppers.
  11. Remove from the oven and garnish with chopped cilantro before serving.
