Ingredients
- 4 large bell peppers
- 1 cup basmati rice
- 1 lb ground beef
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 tbsp pilau masala
- 2 cups beef or vegetable broth
- 2 tbsp vegetable oil
- Salt to taste
- Chopped fresh cilantro for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish and set aside.
- In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.
- Stir in the pilau masala and cook for another minute to toast the spices.
- Add the basmati rice to the skillet and stir to combine with the beef and spices.
- Pour in the broth and season with salt. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Spoon the pilau mixture into the prepared bell peppers, filling them to the top.
- Cover the baking dish with foil and bake in the preheated oven for 20-25 minutes, or until the peppers are tender.
- Remove the foil and bake for an additional 5 minutes to lightly brown the tops of the stuffed peppers.
- Remove from the oven and garnish with chopped cilantro before serving.
