Piman Krab (szechuan Pepper Crab)
Piman Krab, also known as Szechuan Pepper Crab, is a popular dish in Caribbean Chinese Cuisine. This spicy and flavorful crab dish is a fusion of Chinese and Caribbean flavors, creating a unique and delicious seafood experience.
Ingredients
- 2 lbs crab, cleaned and cracked
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2-3 scallions, chopped
- 2-3 hot peppers, sliced
- 1 tablespoon Szechuan peppercorns
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon brown sugar
- 1/2 cup chicken broth
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large wok or skillet over medium heat.
- Add the onion, garlic, ginger, scallions, hot peppers, and Szechuan peppercorns. Stir-fry for 2-3 minutes until fragrant.
- Add the crab to the wok and stir-fry for 5 minutes.
- Stir in the soy sauce, oyster sauce, brown sugar, and chicken broth. Season with salt and pepper to taste.
- Cover and simmer for 15-20 minutes, stirring occasionally, until the crab is cooked through and the sauce has thickened.
- Serve hot, garnished with additional scallions and hot peppers if desired.
