Ingredients

  • 4 large bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups tomato sauce
  • 1 cup chicken or vegetable broth
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, mix together the ground beef, cooked rice, onion, tomatoes, garlic, cumin, paprika, salt, and pepper.
  4. Stuff the bell peppers with the meat and rice mixture.
  5. In a large pot, combine the tomato sauce and broth. Place the stuffed peppers in the pot.
