Ingredients
- 4 large bell peppers
- 1 pound ground beef
- 1 onion, diced
- 2 garlic cloves, minced
- 1 cup cooked rice
- 1 tomato, diced
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup chopped parsley
- 1/2 cup grated cheese (optional)
Instructions
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, cook the ground beef, onion, and garlic until the meat is browned and the vegetables are tender.
- Stir in the cooked rice, diced tomato, paprika, salt, and pepper. Cook for an additional 5 minutes.
- Remove the skillet from the heat and stir in the chopped parsley. If using cheese, add half of it to the filling mixture.
- Stuff the bell peppers with the filling mixture and place them in a large pot.
- Add enough water to the pot to reach halfway up the sides of the peppers. Cover and simmer for 30 minutes, or until the peppers are tender.
- If using cheese, sprinkle the remaining cheese over the peppers during the last 5 minutes of cooking.
- Serve the Pimientos Rellenos Canarios hot and enjoy!
