Ingredients

  • 4 large bell peppers
  • 1 pound ground beef
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 cup cooked rice
  • 1 tomato, diced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup chopped parsley
  • 1/2 cup grated cheese (optional)

Instructions

  1. Cut the tops off the bell peppers and remove the seeds and membranes.
  2. In a skillet, cook the ground beef, onion, and garlic until the meat is browned and the vegetables are tender.
  3. Stir in the cooked rice, diced tomato, paprika, salt, and pepper. Cook for an additional 5 minutes.
  4. Remove the skillet from the heat and stir in the chopped parsley. If using cheese, add half of it to the filling mixture.
  5. Stuff the bell peppers with the filling mixture and place them in a large pot.
  6. Add enough water to the pot to reach halfway up the sides of the peppers. Cover and simmer for 30 minutes, or until the peppers are tender.
  7. If using cheese, sprinkle the remaining cheese over the peppers during the last 5 minutes of cooking.
  8. Serve the Pimientos Rellenos Canarios hot and enjoy!
