Ingredients

  • 4 large red bell peppers
  • 1 cup ground almonds
  • 1 onion, finely chopped

  • 1 tomato, diced
  • 1/4 cup olive oil
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Cut the tops off the peppers and remove the seeds and membranes.
  2. In a skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
  3. Add the ground almonds, diced tomato, smoked paprika, salt, and pepper to the skillet. Cook for 5 minutes, stirring frequently.
  4. Stuff the peppers with the almond mixture and place them in a large pot.
  5. Add enough water to the pot to cover the bottom by about 1 inch. Cover the pot and cook the peppers over medium heat for 30-35 minutes, or until the peppers are tender.
  6. Serve the almond-stuffed peppers hot, garnished with a sprinkle of smoked paprika.
