Ingredients
- 4 large red bell peppers
- 1 cup ground almonds
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tomato, diced

- Salt and pepper to taste
Instructions
- Cut the tops off the peppers and remove the seeds and membranes.
- In a skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
- Add the ground almonds, diced tomato, smoked paprika, salt, and pepper to the skillet. Cook for 5 minutes, stirring frequently.
- Stuff the peppers with the almond mixture and place them in a large pot.
- Add enough water to the pot to cover the bottom by about 1 inch. Cover the pot and cook the peppers over medium heat for 30-35 minutes, or until the peppers are tender.
- Serve the almond-stuffed peppers hot, garnished with a sprinkle of smoked paprika.
