Ingredients
- 4 large bell peppers, any color
- 1 pound ground beef
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1/4 cup raisins
- 1/4 cup pimento-stuffed olives, sliced
- 2 tablespoons tomato paste
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups cooked white rice
Instructions
- In a large skillet, brown the ground beef over medium heat. Add the chopped onion and garlic, and cook until the onion is translucent.
- Stir in the diced tomatoes, raisins, sliced olives, tomato paste, cumin, oregano, salt, and pepper. Simmer for 10 minutes.
- Preheat the oven to 350°F (175°C).
- Cut the tops off the bell peppers and remove the seeds and membranes. Blanch the peppers in boiling water for 3-4 minutes, then drain and set aside.
- Stuff the peppers with the cooked rice and the picadillo mixture.
- Place the stuffed peppers in a baking dish and bake for 25-30 minutes, or until the peppers are tender.
