Ingredients

  • 4 large bell peppers
  • 1 pound ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1/4 cup raisins
  • 1/4 cup pimento-stuffed olives, sliced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 2 cups cooked white rice

Instructions

  1. In a large skillet, brown the ground beef over medium heat.
  2. Add the chopped onion and garlic, and cook until the onion is translucent.
  3. Stir in the diced tomatoes, raisins, olives, cumin, oregano, salt, and pepper. Simmer for 10 minutes.
