Ingredients

  • 4 large bell peppers
  • 1 cup quinoa

  • 1 tomato, diced
  • 1 cup vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup grated cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. Rinse the quinoa under cold water and drain.
  4. In a skillet, sauté the onion and garlic until softened.
  5. Add the diced tomato, quinoa, vegetable broth, cumin, paprika, salt, and pepper. Cook for 15 minutes or until the quinoa is tender and the liquid is absorbed.
