Ingredients
- 4 large bell peppers
- 1 cup quinoa
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tomato, diced
- 1 cup vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup grated cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- Rinse the quinoa under cold water and drain.
- In a skillet, sauté the onion and garlic until softened.
- Add the diced tomato, quinoa, vegetable broth, cumin, paprika, salt, and pepper. Cook for 15 minutes or until the quinoa is tender and the liquid is absorbed.
- Remove from heat and stir in the grated cheese if using.
- Stuff the bell peppers with the quinoa mixture and place them in a baking dish.
- Bake for 25-30 minutes or until the peppers are tender.
