- 1 teaspoon paprika

Instructions
- In a large skillet, sauté the onion and garlic until softened.
- Add the zucchini, carrot, and corn, and cook until the vegetables are tender.
- Stir in the quinoa, vegetable broth, cumin, paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed.
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- Stuff the peppers with the quinoa and vegetable mixture. If desired, top with grated cheese.
- Place the stuffed peppers in a baking dish and bake for 20-25 minutes, or until the peppers are tender.
