  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup grated cheese (optional)

Instructions

  1. In a large skillet, sauté the onion and garlic until softened.
  2. Add the zucchini, carrot, and corn, and cook until the vegetables are tender.
  3. Stir in the quinoa, vegetable broth, cumin, paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed.
  4. Preheat the oven to 375°F (190°C).
  5. Cut the tops off the bell peppers and remove the seeds and membranes.
  6. Stuff the peppers with the quinoa and vegetable mixture. If desired, top with grated cheese.
