Ingredients

  • 4 large bell peppers
  • 1 cup of cooked rice
  • 1 cup of sofrito
  • 1 pound of ground beef
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • 1 cup of tomato sauce
  • 1 cup of shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and the onion is soft.
  4. Stir in the cooked rice, sofrito, cumin, salt, and pepper. Cook for an additional 5 minutes.
  5. Stuff the bell peppers with the beef and rice mixture and place them in a baking dish.
  6. Pour the tomato sauce over the stuffed peppers and sprinkle the mozzarella cheese on top.
  7. Cover the baking dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  8. Serve the stuffed peppers hot and enjoy!
