Pimientos Rellenos, or Stuffed Bell Peppers, are a popular dish in Nicaraguan cuisine. This flavorful and colorful dish is made by stuffing bell peppers with a delicious mixture of ground beef, rice, vegetables, and spices, then baking them to perfection.

Pimientos Rellenos (stuffed Bell Peppers)

Ingredients

  • 4 large bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a skillet, cook the ground beef, onion, and garlic until the beef is browned. Drain any excess fat.
  4. Stir in the cooked rice, tomatoes, cumin, paprika, salt, and pepper. Cook for an additional 5 minutes.
  5. Stuff the bell peppers with the beef and rice mixture, then place them in a baking dish.
  6. Sprinkle the tops of the stuffed peppers with shredded cheese.
  7. Cover the baking dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 10-15 minutes until the peppers are tender and the cheese is bubbly and golden.
  8. Garnish with fresh cilantro before serving.
