Pimientos Rellenos (stuffed Bell Peppers)
Pimientos Rellenos, or Stuffed Bell Peppers, are a popular dish in Nicaraguan cuisine. This flavorful and colorful dish is made by stuffing bell peppers with a delicious mixture of ground beef, rice, vegetables, and spices, then baking them to perfection.
Ingredients
- 4 large bell peppers
- 1 pound ground beef
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheese
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, cook the ground beef, onion, and garlic until the beef is browned. Drain any excess fat.
- Stir in the cooked rice, tomatoes, cumin, paprika, salt, and pepper. Cook for an additional 5 minutes.
- Stuff the bell peppers with the beef and rice mixture, then place them in a baking dish.
- Sprinkle the tops of the stuffed peppers with shredded cheese.
- Cover the baking dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 10-15 minutes until the peppers are tender and the cheese is bubbly and golden.
- Garnish with fresh cilantro before serving.
