Pinakbet Pizza
Pinakbet Pizza is a unique and delicious fusion of Italian and Kapampangan cuisine. This dish combines the flavors of pinakbet, a traditional Filipino vegetable stew, with the convenience and comfort of pizza.
Ingredients
- 1 pre-made pizza dough
- 1 cup pinakbet vegetables (bitter melon, eggplant, squash, string beans)
- 1 cup tomato sauce
- 1 cup mozzarella cheese
- 1/2 cup sliced red onions
- 1/4 cup bagoong (fermented shrimp paste)
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Heat olive oil in a pan over medium heat. Sauté garlic and red onions until fragrant.
- Add the pinakbet vegetables and cook until slightly tender.
- Roll out the pizza dough on a baking sheet and spread the tomato sauce evenly.
- Top the pizza with the cooked pinakbet vegetables and mozzarella cheese.
- Bake in the preheated oven for 15-20 minutes, or until the crust is golden and the cheese is bubbly.
- Drizzle bagoong over the hot pizza before serving.
