Pinakbet with Bagnet is a traditional Filipino dish that originated from the Kapampangan cuisine. It is a flavorful and colorful vegetable stew made with a combination of local vegetables and crispy deep-fried pork belly known as Bagnet.

Pinakbet With Bagnet

Ingredients

  • 1/2 lb pork belly, sliced into cubes
  • 1 cup squash, cubed
  • 1 cup eggplant, sliced
  • 1 cup okra
  • 1 cup string beans, cut into 2-inch pieces
  • 2 tomatoes, sliced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons shrimp paste (bagoong)
  • 3 cups water
  • 2 tablespoons cooking oil
  • Salt and pepper to taste

Instructions

  1. Heat oil in a pan and fry the pork belly until crispy. Set aside.
  2. In the same pan, sauté garlic, onion, and tomatoes until fragrant.
  3. Add shrimp paste and continue to cook for 2 minutes.
  4. Pour water into the pan and bring to a boil.
  5. Add the squash and cook for 5 minutes.
  6. Add the eggplant, okra, and string beans. Simmer for another 5 minutes.
  7. Season with salt and pepper to taste.
  8. Transfer the cooked Bagnet on top of the vegetable stew.
  9. Serve hot with steamed rice.
