Pinakbet With Bagnet
Pinakbet with Bagnet is a traditional Filipino dish that originated from the Kapampangan cuisine. It is a flavorful and colorful vegetable stew made with a combination of local vegetables and crispy deep-fried pork belly known as Bagnet.
Ingredients
- 1/2 lb pork belly, sliced into cubes
- 1 cup squash, cubed
- 1 cup eggplant, sliced
- 1 cup okra
- 1 cup string beans, cut into 2-inch pieces
- 2 tomatoes, sliced
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons shrimp paste (bagoong)
- 3 cups water
- 2 tablespoons cooking oil
- Salt and pepper to taste
Instructions
- Heat oil in a pan and fry the pork belly until crispy. Set aside.
- In the same pan, sauté garlic, onion, and tomatoes until fragrant.
- Add shrimp paste and continue to cook for 2 minutes.
- Pour water into the pan and bring to a boil.
- Add the squash and cook for 5 minutes.
- Add the eggplant, okra, and string beans. Simmer for another 5 minutes.
- Season with salt and pepper to taste.
- Transfer the cooked Bagnet on top of the vegetable stew.
- Serve hot with steamed rice.
