Ingredients
- 1 cup unsalted peanuts
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 sweet potato, diced
- 4 cups vegetable broth
- 1 tsp ground cumin
- 1/2 tsp ground turmeric
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- In a large pot, toast the peanuts over medium heat until fragrant, about 5 minutes.
- Remove the peanuts from the pot and set aside. In the same pot, sauté the onion and garlic until softened.
- Add the sweet potato, vegetable broth, toasted peanuts, cumin, and turmeric to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Using an immersion blender or regular blender, puree the soup until smooth. Season with salt and pepper to taste.
- Serve the soup hot, garnished with chopped cilantro.
