Ingredients

  • 1 cup unsalted peanuts

  • 1 sweet potato, diced
  • 4 cups vegetable broth
  • 1 tsp ground cumin
  • 1/2 tsp ground turmeric
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. In a large pot, toast the peanuts over medium heat until fragrant, about 5 minutes.
  2. Remove the peanuts from the pot and set aside. In the same pot, sauté the onion and garlic until softened.
  3. Add the sweet potato, vegetable broth, toasted peanuts, cumin, and turmeric to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes.
  4. Using an immersion blender or regular blender, puree the soup until smooth. Season with salt and pepper to taste.
  5. Serve the soup hot, garnished with chopped cilantro.
