Ingredients

  • 500g fish fillets, cut into chunks
  • 2 tomatoes, sliced
  • 3 red chilies, sliced
  • 4 shallots, sliced
  • 3 cloves garlic, minced
  • 2 stalks lemongrass, bruised
  • 3 kaffir lime leaves
  • 2 Tbsp tamarind paste
  • 1 Tbsp palm sugar
  • 1 tsp salt
  • 4 cups water

Instructions

  1. In a pot, bring water to a boil. Add shallots, garlic, lemongrass, and kaffir lime leaves. Simmer for 5 minutes.
  2. Add fish, tomatoes, chilies, tamarind paste, palm sugar, and salt. Simmer for 15 minutes.
  3. Adjust the taste with more salt or sugar if needed.
  4. Serve hot with steamed rice.
