Pindang Ikan (spicy Fish Curry)

Ingredients

  • 500g fish fillets
  • 2 tomatoes, diced
  • 4 shallots, sliced
  • 3 cloves garlic, minced
  • 2 red chilies, sliced
  • 2 lemongrass stalks, bruised
  • 3 kaffir lime leaves
  • 1 tsp tamarind paste
  • 1 tsp palm sugar
  • 1 tsp salt
  • 2 cups water
  • 2 tbsp cooking oil

Instructions

  1. In a pot, heat the cooking oil over medium heat.
  2. Add the shallots, garlic, and red chilies. Sauté until fragrant.
  3. Add the fish fillets, tomatoes, lemongrass, and kaffir lime leaves. Cook for 5 minutes.
  4. Dissolve the tamarind paste in water and pour it into the pot. Add palm sugar and salt. Simmer for 20 minutes.
  5. Adjust the seasoning if needed. Serve hot with steamed rice.
