Ingredients
- 500g fish fillets
- 2 tomatoes, diced
- 4 shallots, sliced
- 3 cloves garlic, minced
- 2 red chilies, sliced
- 2 lemongrass stalks, bruised
- 3 kaffir lime leaves
- 1 tsp tamarind paste
- 1 tsp palm sugar
- 1 tsp salt
- 2 cups water
- 2 tbsp cooking oil
Instructions
- In a pot, heat the cooking oil over medium heat.
- Add the shallots, garlic, and red chilies. Sauté until fragrant.
- Add the fish fillets, tomatoes, lemongrass, and kaffir lime leaves. Cook for 5 minutes.
- Dissolve the tamarind paste in water and pour it into the pot. Add palm sugar and salt. Simmer for 20 minutes.
- Adjust the seasoning if needed. Serve hot with steamed rice.
