Ingredients

  • 400g fresh yellow noodles
  • 200g fish fillet, sliced
  • 2 tomatoes, diced
  • 2 stalks lemongrass, bruised
  • 4 kaffir lime leaves
  • 4 red chilies, sliced
  • 4 cloves garlic, minced
  • 2 Tbsp tamarind paste
  • 1 Tbsp palm sugar
  • 1 Tbsp fish sauce
  • 1 liter water
  • Salt to taste

Instructions

  1. Boil the water in a pot and add lemongrass, kaffir lime leaves, garlic, and chilies. Simmer for 10 minutes.
  2. Add the fish fillet, tomatoes, tamarind paste, and palm sugar. Cook for another 10 minutes.
  3. Season with fish sauce and salt. Add the fresh noodles and cook for 5 minutes.
  4. Remove from heat and serve hot.
