Ingredients

  • 500g fish fillets, cut into pieces
  • 200g rice noodles
  • 2 tomatoes, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 red chilies, sliced
  • 3 cups water
  • 4 tbsp tamarind paste
  • 2 tbsp palm sugar
  • 2 tbsp fish sauce
  • 1 stalk lemongrass, bruised
  • 4 kaffir lime leaves
  • Salt to taste

Instructions

  1. In a pot, bring water to a boil and add tamarind paste, palm sugar, fish sauce, lemongrass, and kaffir lime leaves. Simmer for 10 minutes.
  2. Add fish fillets, tomatoes, onion, garlic, and red chilies to the pot. Cook for 15 minutes until the fish is fully cooked.
  3. Cook rice noodles according to package instructions and divide them into serving bowls.
  4. Pour the spicy and sour tamarind soup over the noodles and fish. Serve hot.
