Pineapple Chicha (chicha De Piña)

Ingredients

  • 1 ripe pineapple, peeled and chopped
  • 1 cup white rice
  • 8 cups water
  • 1 cup granulated sugar
  • 1 cinnamon stick
  • 4 cloves
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a large pot, combine the chopped pineapple, rice, and water. Bring to a boil over medium heat, then reduce the heat and simmer for 20 minutes, stirring occasionally.
  2. Add the sugar, cinnamon stick, cloves, vanilla extract, and salt to the pot. Simmer for an additional 10 minutes, allowing the flavors to meld together.
  3. Remove the pot from the heat and let the chicha cool to room temperature.
  4. Once cooled, strain the chicha through a fine-mesh sieve, pressing on the solids to extract all the liquid. Discard the solids.
  5. Refrigerate the chicha until chilled, then serve over ice. Enjoy!
