Pineapple Chicken Adobo

Ingredients
- 2 lbs chicken thighs, bone-in and skin-on
- 1 cup pineapple chunks
- 1/2 cup soy sauce
- 1/4 cup vinegar
- 1/4 cup brown sugar
- 4 cloves garlic, minced
- 1 onion, sliced
- 1 teaspoon whole black peppercorns
- 3 bay leaves
- 2 tablespoons cooking oil
- Salt to taste
Instructions
- In a large bowl, combine soy sauce, vinegar, brown sugar, garlic, and black peppercorns. Mix well to create the marinade.
- Add the chicken thighs to the marinade, making sure they are well coated. Marinate for at least 30 minutes, or overnight for best results.
- Heat cooking oil in a large pot over medium heat. Add the sliced onions and cook until softened.
- Add the marinated chicken thighs to the pot, including the marinade. Let it simmer for 10 minutes.
- Add the bay leaves and pineapple chunks to the pot. Cover and let it simmer for another 30-40 minutes, or until the chicken is fully cooked and tender.
- Season with salt to taste. Serve the Pineapple Chicken Adobo hot with steamed rice.
