Pineapple Chicken Adobo

Ingredients

  • 2 lbs chicken thighs, bone-in and skin-on
  • 1 cup pineapple chunks
  • 1/2 cup soy sauce
  • 1/4 cup vinegar
  • 1/4 cup brown sugar
  • 4 cloves garlic, minced
  • 1 onion, sliced
  • 1 teaspoon whole black peppercorns
  • 3 bay leaves
  • 2 tablespoons cooking oil
  • Salt to taste

Instructions

  1. In a large bowl, combine soy sauce, vinegar, brown sugar, garlic, and black peppercorns. Mix well to create the marinade.
  2. Add the chicken thighs to the marinade, making sure they are well coated. Marinate for at least 30 minutes, or overnight for best results.
  3. Heat cooking oil in a large pot over medium heat. Add the sliced onions and cook until softened.
  4. Add the marinated chicken thighs to the pot, including the marinade. Let it simmer for 10 minutes.
  5. Add the bay leaves and pineapple chunks to the pot. Cover and let it simmer for another 30-40 minutes, or until the chicken is fully cooked and tender.
  6. Season with salt to taste. Serve the Pineapple Chicken Adobo hot with steamed rice.
