Pineapple Chicken Stir-fry

Ingredients

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 cup pineapple chunks
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together soy sauce, brown sugar, and cornstarch. Set aside.
  2. Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.
  3. Add chicken pieces and stir-fry until browned and cooked through. Remove chicken from the wok and set aside.
  4. Heat the remaining tablespoon of vegetable oil in the same wok.
  5. Add garlic and ginger, and stir-fry for 1 minute until fragrant.
  6. Add sliced onion and red bell pepper, and stir-fry for 2-3 minutes until slightly softened.
  7. Return the cooked chicken to the wok, along with the pineapple chunks.
  8. Pour the soy sauce mixture over the chicken and vegetables, and stir-fry for another 2-3 minutes until the sauce thickens and coats the ingredients.
  9. Season with salt and pepper to taste.
  10. Serve the Pineapple Chicken Stir-Fry hot over steamed rice.
