Pineapple Chicken Stir-fry

Ingredients
- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 1 cup pineapple chunks
- 1 red bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 tsp ginger, grated
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 1 tbsp cornstarch
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together soy sauce, brown sugar, and cornstarch. Set aside.
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.
- Add chicken pieces and stir-fry until browned and cooked through. Remove chicken from the wok and set aside.
- Heat the remaining tablespoon of vegetable oil in the same wok.
- Add garlic and ginger, and stir-fry for 1 minute until fragrant.
- Add sliced onion and red bell pepper, and stir-fry for 2-3 minutes until slightly softened.
- Return the cooked chicken to the wok, along with the pineapple chunks.
- Pour the soy sauce mixture over the chicken and vegetables, and stir-fry for another 2-3 minutes until the sauce thickens and coats the ingredients.
- Season with salt and pepper to taste.
- Serve the Pineapple Chicken Stir-Fry hot over steamed rice.
