Pineapple Chutney Chicken

Ingredients

  • 4 chicken breasts, boneless and skinless
  • 1 cup pineapple chunks
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon curry powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons brown sugar
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. In a bowl, mix together pineapple chunks, onion, garlic, ginger, curry powder, cumin, turmeric, cayenne pepper, brown sugar, and apple cider vinegar to make the chutney.
  2. Season the chicken breasts with salt and pepper.
  3. In a large skillet, heat vegetable oil over medium-high heat.
  4. Add the chicken breasts and cook for 5-6 minutes on each side until golden brown and cooked through.
  5. Remove the chicken from the skillet and set aside.
  6. In the same skillet, add the prepared pineapple chutney and cook for 3-4 minutes until the flavors meld together.
  7. Return the cooked chicken to the skillet and spoon the pineapple chutney over the chicken.
  8. Simmer for an additional 2-3 minutes, allowing the flavors to combine.
  9. Remove from heat and serve the Pineapple Chutney Chicken hot.
