Ingredients
- 4 chicken breasts, boneless and skinless
- 1 cup pineapple chunks
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 teaspoon curry powder
- 1/2 teaspoon cumin
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 2 tablespoons brown sugar
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- In a bowl, mix together pineapple chunks, onion, garlic, ginger, curry powder, cumin, turmeric, cayenne pepper, brown sugar, and apple cider vinegar to make the chutney.
- Season the chicken breasts with salt and pepper.
- In a large skillet, heat vegetable oil over medium-high heat.
- Add the chicken breasts and cook for 5-6 minutes on each side until golden brown and cooked through.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the prepared pineapple chutney and cook for 3-4 minutes until the flavors meld together.
- Return the cooked chicken to the skillet and spoon the pineapple chutney over the chicken.
- Simmer for an additional 2-3 minutes, allowing the flavors to combine.
- Remove from heat and serve the Pineapple Chutney Chicken hot.
