Pineapple Fried Rice (菠萝炒饭)

Ingredients

  • 3 cups cooked white rice
  • 1 cup fresh pineapple, diced
  • 1/2 cup frozen peas, thawed
  • 1/2 cup carrots, diced
  • 1/2 cup red bell pepper, diced
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium heat.
  2. Add the beaten eggs and scramble until cooked. Remove from the wok and set aside.
  3. Heat the remaining 1 tablespoon of vegetable oil in the wok. Add the minced garlic and stir-fry until fragrant.
  4. Add the carrots, red bell pepper, and peas. Stir-fry for 2-3 minutes until the vegetables are slightly tender.
  5. Add the cooked rice, diced pineapple, and scrambled eggs to the wok. Pour the soy sauce over the ingredients and toss everything together until well combined.
  6. Season with salt and pepper to taste. Continue to stir-fry for another 2-3 minutes.
  7. Once everything is heated through, remove from heat and serve the pineapple fried rice hot.
