Ingredients
- 3 cups cooked white rice
- 1 cup fresh pineapple, diced
- 1/2 cup frozen peas, thawed
- 1/2 cup carrots, diced
- 1/2 cup red bell pepper, diced
- 2 cloves garlic, minced
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium heat.
- Add the beaten eggs and scramble until cooked. Remove from the wok and set aside.
- Heat the remaining 1 tablespoon of vegetable oil in the wok. Add the minced garlic and stir-fry until fragrant.
- Add the carrots, red bell pepper, and peas. Stir-fry for 2-3 minutes until the vegetables are slightly tender.
- Add the cooked rice, diced pineapple, and scrambled eggs to the wok. Pour the soy sauce over the ingredients and toss everything together until well combined.
- Season with salt and pepper to taste. Continue to stir-fry for another 2-3 minutes.
- Once everything is heated through, remove from heat and serve the pineapple fried rice hot.
