Pineapple Fried Rice (Cơm rang khế)

Ingredients

  • 3 cups cooked jasmine rice
  • 1 cup fresh pineapple, diced
  • 1/2 cup frozen peas and carrots
  • 2 eggs, beaten
  • 3 cloves garlic, minced
  • 1/4 cup roasted unsalted cashews
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 tablespoon curry powder
  • 1/2 teaspoon sugar
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium heat.
  2. Add the beaten eggs and scramble until cooked. Remove from the pan and set aside.
  3. Heat the remaining 1 tablespoon of vegetable oil in the same pan. Add the minced garlic and cook until fragrant.
  4. Add the cooked rice, pineapple, peas, carrots, and cashews to the pan. Stir-fry for 3-4 minutes.
  5. Push the rice mixture to one side of the pan and pour the soy sauce on the empty side. Add the curry powder and sugar to the soy sauce, then mix everything together.
  6. Add the scrambled eggs back into the pan and stir to combine with the rice mixture.
  7. Season with salt and pepper to taste. Cook for an additional 2-3 minutes, stirring constantly.
  8. Remove from heat and serve hot.
