Ingredients
- 3 cups cooked rice
- 1 cup diced pineapple

- 2 eggs, beaten

- 1/2 cup diced onion
- 3 cloves garlic, minced
- 1/4 cup chopped green onions

Instructions
- In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.
- Add the beaten eggs and scramble until cooked. Remove from the skillet and set aside.
- Heat the remaining vegetable oil in the skillet and sauté the diced onion and garlic until fragrant.
- Add the diced carrots and frozen peas, and cook until the vegetables are tender.
- Stir in the cooked rice, diced pineapple, and soy sauce. Cook for a few minutes to heat everything through.
- Add the scrambled eggs back into the skillet and stir to combine.
- Season with salt and pepper, and garnish with chopped green onions before serving.
