Pineapple Fried Rice (Riz sauté à l'ananas)

Ingredients

  • 3 cups cooked rice
  • 1 cup diced pineapple
  • 1/2 cup diced carrots
  • 1/2 cup frozen peas
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1/2 cup diced onion
  • 3 cloves garlic, minced
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.
  2. Add the beaten eggs and scramble until cooked. Remove from the skillet and set aside.
  3. Heat the remaining vegetable oil in the skillet and sauté the diced onion and garlic until fragrant.
  4. Add the diced carrots and frozen peas, and cook until the vegetables are tender.
  5. Stir in the cooked rice, diced pineapple, and soy sauce. Cook for a few minutes to heat everything through.
  6. Add the scrambled eggs back into the skillet and stir to combine.
  7. Season with salt and pepper, and garnish with chopped green onions before serving.
