Pineapple Fried Rice (thai-inspired Pineapple Fried Rice)

Ingredients

  • 2 cups cooked jasmine rice, chilled
  • 1 cup diced pineapple
  • 1 chicken breast, diced
  • 2 eggs, beaten
  • 1/2 cup frozen peas and carrots
  • 3 cloves garlic, minced
  • 3 green onions, chopped
  • 1/4 cup cashews, chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon curry powder
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon sugar
  • 1/4 teaspoon white pepper

Instructions

  1. Heat vegetable oil in a large wok or skillet over medium-high heat.
  2. Add minced garlic and diced chicken, and stir-fry until the chicken is cooked through.
  3. Push the chicken to one side of the wok, pour the beaten eggs onto the other side, and scramble the eggs.
  4. Add frozen peas and carrots, diced pineapple, and chopped green onions to the wok. Stir-fry for 2-3 minutes.
  5. Add chilled jasmine rice to the wok, breaking up any clumps, and stir-fry for another 2-3 minutes.
  6. Season the fried rice with soy sauce, fish sauce, curry powder, sugar, and white pepper. Stir well to combine all the ingredients.
  7. Add chopped cashews and continue to stir-fry for another 1-2 minutes.
  8. Remove the wok from the heat and serve the Pineapple Fried Rice hot.
