Ingredients
- 2 cups cooked jasmine rice, chilled
- 1 cup diced pineapple
- 1 chicken breast, diced
- 2 eggs, beaten
- 1/2 cup frozen peas and carrots
- 3 cloves garlic, minced
- 3 green onions, chopped
- 1/4 cup cashews, chopped
- 3 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon curry powder
- 1 tablespoon vegetable oil
- 1/2 teaspoon sugar
- 1/4 teaspoon white pepper
Instructions
- Heat vegetable oil in a large wok or skillet over medium-high heat.
- Add minced garlic and diced chicken, and stir-fry until the chicken is cooked through.
- Push the chicken to one side of the wok, pour the beaten eggs onto the other side, and scramble the eggs.
- Add frozen peas and carrots, diced pineapple, and chopped green onions to the wok. Stir-fry for 2-3 minutes.
- Add chilled jasmine rice to the wok, breaking up any clumps, and stir-fry for another 2-3 minutes.
- Season the fried rice with soy sauce, fish sauce, curry powder, sugar, and white pepper. Stir well to combine all the ingredients.
- Add chopped cashews and continue to stir-fry for another 1-2 minutes.
- Remove the wok from the heat and serve the Pineapple Fried Rice hot.
