Pineapple Fried Rice With Spam

Ingredients

  • 2 cups cooked white rice
  • 1 can Spam, diced
  • 1 cup pineapple chunks
  • 1 red bell pepper, diced
  • 1/2 cup frozen peas
  • 3 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 eggs, beaten
  • 4 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.
  2. Add the diced Spam and cook until browned, about 5 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the garlic, red bell pepper, and frozen peas. Cook for 3-4 minutes until the vegetables are tender.
  4. Push the vegetables to the side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until cooked through.
  5. Add the cooked rice, soy sauce, and pineapple chunks to the skillet. Stir to combine with the vegetables and eggs.
  6. Add the cooked Spam back to the skillet and stir to incorporate.
  7. Season with salt and pepper to taste. Cook for an additional 2-3 minutes to heat everything through.
  8. Remove from heat and stir in the chopped green onions.
