Ingredients
- 2 cups cooked white rice
- 1 can Spam, diced
- 1 cup pineapple chunks

- 3 cloves garlic, minced
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 eggs, beaten
- 4 green onions, chopped
- Salt and pepper to taste
Instructions
- In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.
- Add the diced Spam and cook until browned, about 5 minutes. Remove from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the garlic, red bell pepper, and frozen peas. Cook for 3-4 minutes until the vegetables are tender.
- Push the vegetables to the side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until cooked through.
- Add the cooked rice, soy sauce, and pineapple chunks to the skillet. Stir to combine with the vegetables and eggs.
- Add the cooked Spam back to the skillet and stir to incorporate.
- Season with salt and pepper to taste. Cook for an additional 2-3 minutes to heat everything through.
- Remove from heat and stir in the chopped green onions.
